Roti boy – Mexican bun

We, Indonesian, called it roti boy, but maybe you know it as Mexican bun. This is my weekend project, as this last weekend of January, I don’t want to go outside, just want at home. My hubby who have a football league at noon, also cancelled his schedule, He also want to be at home with us, yeay! πŸ™‚

So, to make Adib happy, I asked him to have a kitchen’s project together. First he want to make cupcake, Green velvet cupcake just like he love. But, I’m not in my mood to make anything sweet πŸ˜€ When, I asked him to help me make bread, Suddenly he jump , and take the bread flour.He want to use the bread flour since 4 months ago,since We never make any bread, so it was never been used.

Dough :
250gre bread flour
40gr sugar
4gr yeast
1/2 beaten egg
135gr fresh mimlk
30 gr butter

Filling :
100gr butter
1/2 tsp vanilla powder
35gr brown sugar
50gr grated cheese

Topping
50gr Butter
40gr sugar
1/2 beaten egg
50 all purpose flour
50gr grated cheese for sprinkle

How to:

1. Filling : Mix butter, vanilla powder and brown sugar until smooth. Divide the mixture into two, Add grated cheese to one of the mixture, put it in the fridge until harden and divide to 5 balls each plan and cheese mixture.
2. Topping, Beat the butter and sugar, until cooperate and smooth, add egg and flour. Put the mixture on pipping bag and keep in the fridge until ready to use.
3.Dough, knead all ingridients together except butter for 10 minutes until smooth, then add butter, continue kneading process untill elastic , smooth and not sticky for about 30 minutes.
4. DIvide the dough into 10 bun, and let it rest for 15 minutes.
5. Take one bun, flat and filled with the plain or cheese filling, seal tightly and shape into round ball, place in to the baking tray and cover with plastic wrap and let it proof for an hour.
7. Pipe out the topping in spiral, bake for 10-12 minutes at 200dC.

The basic bread’s recipe can be used for any kind of bread, named it! Milk loaf bread, TUna or chicken floss bread, Chocolate or cheese filling bread ,Pizza bread, Burger or sandwich bun , Anykind of less sweet bread, You can used this simple recipe.

Just keep patience to make the dough smooth and elastic, since I only have simple mixer, so I used my hand, 30 minutes kneading the dough, and it gave me a great bun result! πŸ™‚

Maybe, my Roti boy looks pale in color, it because I don’t use coffee, because Adib did’t like coffee. When the bun came out fresh from the oven, Me, Adib and ayah can’t wait to try, it’s so delicious! πŸ™‚ Enjoy our lovely weekend, even we had a grocery shopping at the afternoon.

Strawberry Swirl pound cake

When I was saw the recipe, I felt in love with the collaboration color of those berries in here πŸ™‚ Unfortunately, I only have one kind of berries, which is strawberry. So, I decided to follow the recipe using strawberry.


Ingredients :
1/2 cup unsalted butter, room temperature
1-1/2 cup strawberry
1 cup sugar
1-1/2 cup all purpose flour
1/4 tsp Baking powder
2 large eggs
1/2 tsp vanilla powder
1/2 cup yogurt

How to:
1. Puree the strawberry, set a side
2. Using an electric mixer, beat sugar and butter until fluffy, add eggs and vanilla.
3. Add flour alternating with yougurt in 3 additions.
4. Take 4 tbs of batter to the strawberry puree, mix well.
5. Pour half batter to the loaf pan that already buttered and line with parchament papper. Then pour half of stawberry puree, make swirl. Pour the remaining half batter and top with remaining half strawberry puree and make the last swirl.
6. Bake for 180dC for 40-50 minutes or a toothpick inserted in center of cake comes out clean.


You can use not just one berries, for different swirl color. blackberry or blueberry swirl with stawberry or raspberry will make a beautiful swirl.Give additional strawberry cube if you want. And you can substitute Yogurt with the original recipe using Sour cream or buttermilk.

Definitly will make this one again, because I love the texture, it was very moist. Really enjoy when it was dipped into a hot chocolate or milk πŸ™‚

Puff with pastry

Can not say much more with this helpful instant puff pastry, I always love love love it!

For breakfast, Filled the pastry with chicken mushroom and white sauce, then just bake.


For instant meal or school’s snack, just take a long tiny cut to puff pastry and swirl it, bake. You can dip on mayonnaise or tomato ketchup.


For dessert, make pastry basket and filled with custard you love.

Simple breakfast

I guarantee that this meal is one of simple breakfast ever! πŸ™‚ IfΒ  you don’t have much time to prepare breakfast, this one will helpΒ  you.
Just need Bread you love, top with smooked beef and fried egg, add tomato sauce and melted cheese, then baked until the cheese melt.


Easy, isn’t it?

Blueberry jam chiffon

Still in love when seeing this blog πŸ™‚ And just want to make like her beautiful chiffon cake.


Adapted from : Happyhomebaking

100g cake flour
1/2 teaspoon baking powder
3 egg yolks
40g caster sugar
50ml vegetable oil
5 tablespoons instan blueberry jam + 40ml water

3 egg whites
40g caster sugar

Method:

1. Sieve flour and baking powder together, set aside.
2. Separate egg yolks and whites.
3. In a clean, dry mixing bowl, beat egg whites with an electric mixer until mixture becomes frothy and foamy. Gradually beat in the sugar and beat on high speed until soft peaks form.
4. Mix egg yolks and sugar until combine, add combination bluberry jam and water. Pour flour and Baking powder, gently flod and the add oil.
5. Add the beaten egg white into the egg yolk batter in 3 separate additions, each time folding gently with a spatula until just blended.
6. Bake at 180dC for 30 minutes

I change the basic recipe if you notice, because She said that we can change the jam for any kind of our favorite.

Carrot cupcakes vs Oreo cupcakes

With one batter, making two version of cupcakes. I just want to make it simple. Using my last cupcakes recipe, but without any coloring. Add 150gr of Grated carrot or Oreo cookies crumble to the batter, then baked as usual.


For topping, I used plain cream cheese frosting for Carrot cupcake and Oreao cream cheese frosting for oreo cupcake, just add some oreo cookies crumble to the plain cream cheese frosting πŸ™‚

One recipe for different taste of muffin!

Been a while not updating this blog, Getting busy at the new office, make me need someΒ  adjusment at the morning. But, Alhamdulillah, my mom came because she missed Adib, and because adib on his school holiday. I got my precious “me time” for 2 months πŸ™‚ Ibu help me in the kitchen.

Adib has got addicted with muffin lately, He love muffin so much! each time He woke up early, He asked to make Muffin together. It’s all because, His favorite tv program “I can Cook” on cbeebies. The Full history, you can read here πŸ™‚

For a momment, I forgot the recipe of this muffin. It’s all because this picture already in my albums since 2 months ago :p
