Custard Chocochips cupcake

Find an old experiment’s picture, I hope this one will boost my mood to make another one. Actually last weekend, Adib asked me to make cake and Nugget. But … still with old same reason, Not enough time plus the most important is MOOD!

This moist and soft cupcake was different with the other chocochips cupcake, Hope you will love the texture, because I do love this one πŸ™‚

Custard chocohips cupcake

50gr corn flour
3tbs chocolate powder
10gr sugar
225ml chocolate milk
75gr unsalted butter
75ml vegetable oil
2tsp vanilla powder
2 large eggs
125gr sugar
125gr All purpose flour
2tbs Baking powder
125gr chocohips

How to:
1. Mix corn flour, sugar , chocolate powder and milk, stir first until all well mixed, then put in a low heat, stir until batter become stink and creamy.

2. Turn the heat off, add butter,oil and vanilla powder, mix

3. Add eggs one at a time and mix until dissolve, add sugar, flour and baking powder, well combine. Add chocohips.

4. Pour into muffin cup and bake at 180dC for 25minutes

5. Add Hazelnut jam or other topping you like.

For note , you can change chocohips with cheese or fruit, but don’t forget to change any flavor of chocolate milk, and you can change chocolate powder with milk powder. Simple cupcake for Kids.

School competition

Actually this was a very late post! this competition were held a month ago,Β  since it was on Saturday, so I made snack the day before. Simple snack but all time favorite.

This blueberry chiffon with fresh blueberry was not my 1st one, but I always forgot to take a pic, Yup, Don’t know why, I can’t boost my mood Up to take any pic of what I made, so there so many experiment I didn’t capture 😦

Made the recipe just like I made before, see recipe hereΒ  ,but I add 1/2 cup fresh blueberries.

And for the weekend snack, Me and Adib made a cheesy cookies , recipe taken from NCC mailing list .

Ingredients :
250gr butter
3 eggs yolk
1 egg white
1 granulated sugar
150gr Parmesan,Β  grated

325gr All purpose flour
100gr Sago flour
100gr chocochips

How to:
1. Mix butter, eggs yolk and white, sugar and cheese, until well combine.
2. Add flour , mix.
3. With a rolling pin, roll the dough until 5mm and cut with your favorite

shape of cookie cutter. Put some chocochips in top of each cookies
4. Ready to bake.

Simple cookies, isn’t it? πŸ™‚

He’s turning 6!

Yesterday, as Adib’s requested, He want to make cupcake with me for his friends at school. We decide to make Chocolate velvet cake and Banana carrot cupcake. Having a lot of fun!

Chocolate velvet cake
Taken from hereΒ Β Β  ,Simple Red velvet cake, but I don’t want to use any food coloring , since this for kids.

2 1/2 cups all purpose flour
1 1/2 cups sugar
3 tbs cocoa powder
1 1/2 tsp baking soda
2 large eggs
1 1/2 cups vegetable oil
1 cup buttermilk
1 tsp vanilla powder

How to :
1.Β  Mix together dry ingredients : flour, sugar, baking soda & vanilla set a side
2. Mix wet ingredients : eggs, oil & buttermilk.
3. Add wet ingredients into dry ingredients, mix with low speed mixer until well blended.
4. Pour 3/4 full into muffin tray or round cake tray, bake for 20-30 minutes on 180dC

And the second muffin were our favorite ever! Actually, I want to make carrot cupcake, but since I only have 2 pieces of medium carrot, so I add some mashed banan, and it turn Nice!

Banana carrot muffin
Basic recipe taken from hereΒ  , but i modified.

1 cup all purpose flour
3/4 cup sugar
1 tsp baking soda
1/3 tsp baking powder
1/3 cup vegetable oil
2 tbs melted butter
1 tsp vanilla powder
2 large eggs
2 tsp mayonnaise
1 cup grated carrot
1/2 cup mashed banana

How to :
1.Mix dry ingredients : flour, sugar, baking powder, baking soda & vanilla
2. Mix wet ingredients :Oil, butter, eggs, mayonnaise.
3. Add wet ingredients to dry ingredients with electric mixer for 5 minutes, add grated carrot and mashed banana.
4. Pour into cupcake liner 3/4 full. Bake at 180dC for 20-25 minutes

For all cake and cupcake, I’m using mascarpone frosting! Love this frosting, so nyum!

Macarpone frosting

2 packed (250gr) mascarpone
1 packed (250gr) Cream cheese
250ml Heavy cream
1 cup Powder sugar
3/4 cup Butter

How to :
1. With electric mixer, beat Heavy cream until creamy.
2. Beat Butter and powder sugar until pale and creamy, add into Heavy cream mixture.
3. Add Mascarpone and cream cheese, beat all until well combine, Ready to use.

When all of my cupcakes ready, suddenly adib take one cupcake of Banana carrot cupcake and He Love it! He asked more with frosting, and show me how He licked his mouth and Tell me How delicious it is, ooo thank you so much Anak, Love it when you like it.

Then, at school, Alhamdulillah, all of his friends said It was a cute mini cupcake and they want one! πŸ™‚

3 dogs at the park

No idea what will I made this morning. I wake up early today, so I can start cooking at 6 AM πŸ™‚ Yeay… but still, stuck with no idea. I asked my assistant to steam the potatoes. First, The idea came with making potato smashed, but I remember that Adib not a potato lover, so I change his school’s menu with Lasagna, but using potato instead of pasta.

And the result, so yuuuum! Love it! Make 3 cup of Potato Lasagna, Ayah and I love it, can’t wait for Adib’s comment πŸ™‚

“3 dogs at the park”

Potato mixture :
3 medium potatoes, peal, steam and smashed
75ml fresh milk
1 tbs butter
50gr Carrot, grated
75gr Shrimp , minced
salt & pepper

Tomato sauce :
1 fresh tomato, boil, peal and chopped
1 small garlic, grated
1/4 onion, chopped
Salt & pepper
1 tbs butter
100gr shrimp , chopped

White sauce
1 tsp butter
1 tsp flour
125ml fresh milk
50gr grated cheese
salt & pepper

Shrimp and tofu balls

How to :
1. Potato mixture : Saute butter , add grated carrot and minced shrimp until the shrimp turn out pink, add fresh milk and potato, then sprinkle salt and pepper, mix on low heat until the potato mixture not stick on the pan.
2. Tomato sauce : Saute butter, add garlic and onion until golden brown, add fresh chopped tomatoes and shrimp, seasoning with salt and pepper, mix until the chopped tomatoes turn thick.
3. White sauce : Saute butter in low heat, add flour and milk, wait until shimmer and add grated cheese , salt and pepper.
4. Garnish : for shrimp and tofu balls, I made it from 100gr minced shrimp and 150gr tofu, mix with pure of 2 garlic, salt and pepper. Add 1 egg yolk, shape on a ball and fried.
5. Vegetable Garnish, for vegetable, I made the shrimp and tofu balls as a stone , cauliflower and broccoli as the tree and Carrot shape with dog cutter as the main figure.

6. Preparation : On a cup ,1st layer is potato mixture, 2nd layer is tomato sauce , 3rd layer is potato mixture then 4th layer is white sauce , bake on 170dC for 20 minutes. Ready to garnish.

Don’t ever think that this one is difficult meal, As you know on my post, I always try to put simplicity for my cooking (not baking πŸ˜€ )

Roti boy – Mexican bun

We, Indonesian, called it roti boy, but maybe you know it as Mexican bun. This is my weekend project, as this last weekend of January, I don’t want to go outside, just want at home. My hubby who have a football league at noon, also cancelled his schedule, He also want to be at home with us, yeay! πŸ™‚

So, to make Adib happy, I asked him to have a kitchen’s project together. First he want to make cupcake, Green velvet cupcake just like he love. But, I’m not in my mood to make anything sweet πŸ˜€ When, I asked him to help me make bread, Suddenly he jump , and take the bread flour.He want to use the bread flour since 4 months ago,since We never make any bread, so it was never been used.

Dough :
250gre bread flour
40gr sugar
4gr yeast
1/2 beaten egg
135gr fresh mimlk
30 gr butter

Filling :
100gr butter
1/2 tsp vanilla powder
35gr brown sugar
50gr grated cheese

50gr Butter
40gr sugar
1/2 beaten egg
50 all purpose flour
50gr grated cheese for sprinkle

How to:

1. Filling : Mix butter, vanilla powder and brown sugar until smooth. Divide the mixture into two, Add grated cheese to one of the mixture, put it in the fridge until harden and divide to 5 balls each plan and cheese mixture.
2. Topping, Beat the butter and sugar, until cooperate and smooth, add egg and flour. Put the mixture on pipping bag and keep in the fridge until ready to use.
3.Dough, knead all ingridients together except butter for 10 minutes until smooth, then add butter, continue kneading process untill elastic , smooth and not sticky for about 30 minutes.
4. DIvide the dough into 10 bun, and let it rest for 15 minutes.
5. Take one bun, flat and filled with the plain or cheese filling, seal tightly and shape into round ball, place in to the baking tray and cover with plastic wrap and let it proof for an hour.
7. Pipe out the topping in spiral, bake for 10-12 minutes at 200dC.

The basic bread’s recipe can be used for any kind of bread, named it! Milk loaf bread, TUna or chicken floss bread, Chocolate or cheese filling bread ,Pizza bread, Burger or sandwich bun , Anykind of less sweet bread, You can used this simple recipe.

Just keep patience to make the dough smooth and elastic, since I only have simple mixer, so I used my hand, 30 minutes kneading the dough, and it gave me a great bun result! πŸ™‚

Maybe, my Roti boy looks pale in color, it because I don’t use coffee, because Adib did’t like coffee. When the bun came out fresh from the oven, Me, Adib and ayah can’t wait to try, it’s so delicious! πŸ™‚ Enjoy our lovely weekend, even we had a grocery shopping at the afternoon.

Strawberry Swirl pound cake

When I was saw the recipe, I felt in love with the collaboration color of those berries in here πŸ™‚ Unfortunately, I only have one kind of berries, which is strawberry. So, I decided to follow the recipe using strawberry.

Ingredients :
1/2 cup unsalted butter, room temperature
1-1/2 cup strawberry
1 cup sugar
1-1/2 cup all purpose flour
1/4 tsp Baking powder
2 large eggs
1/2 tsp vanilla powder
1/2 cup yogurt

How to:
1. Puree the strawberry, set a side
2. Using an electric mixer, beat sugar and butter until fluffy, add eggs and vanilla.
3. Add flour alternating with yougurt in 3 additions.
4. Take 4 tbs of batter to the strawberry puree, mix well.
5. Pour half batter to the loaf pan that already buttered and line with parchament papper. Then pour half of stawberry puree, make swirl. Pour the remaining half batter and top with remaining half strawberry puree and make the last swirl.
6. Bake for 180dC for 40-50 minutes or a toothpick inserted in center of cake comes out clean.

You can use not just one berries, for different swirl color. blackberry or blueberry swirl with stawberry or raspberry will make a beautiful swirl.Give additional strawberry cube if you want. And you can substitute Yogurt with the original recipe using Sour cream or buttermilk.

Definitly will make this one again, because I love the texture, it was very moist. Really enjoy when it was dipped into a hot chocolate or milk πŸ™‚

Simple breakfast

I guarantee that this meal is one of simple breakfast ever! πŸ™‚ IfΒ  you don’t have much time to prepare breakfast, this one will helpΒ  you.
Just need Bread you love, top with smooked beef and fried egg, add tomato sauce and melted cheese, then baked until the cheese melt.

Easy, isn’t it?
